What's in the cup

Zhengshan Xiaozhong (正山小种) -- known in the West as Lapsang Souchong -- is the world's first black tea, originating in the Wuyi Mountains of Fujian. This is the honey-forward style: naturally sweet, round in the mouth, with the characteristic warmth that comes from the cultivar and the mountain, not from anything added.

The liquor is a deep clear amber-red, bright in the light. The dry leaf is fine and dark, consistent. What arrives in the cup is smooth from the first sip -- no astringency, no bitterness, nothing to get past before you can enjoy it.

How to brew

Water temperature: 205–212°F (96–100°C)

Leaf ratio: 4g per 300ml

First steep: 30–45 seconds. Add 15–20 seconds each round.

Works well both gongfu-style and in a regular mug. Milk optional -- this style holds up to it if you like.
